mmmm… brownies

mmmm… brownies

So y’all really got into my tongue-in-cheek post about Coke! I was surprised. :-) You should be happy to know that I have yet to buy the extra 2 cans of Coke; I am saving it for the end of the month. These past few days I haven’t missed Coke much at all, though it is hard when Paul is drinking it and I’m stuck with water! :-p Oh well. It’s for my own good.

So those of you who have been around for a while, I have a special treat for you today! You may remember last October me mentioning that I love to make brownies. I had two requests for my brownie recipe, and actually completely forgot about posting that until today. So, without further ado, here it is (warning: this isn’t the “healthy” brownie recipe!):

Ashley’s Favorite Brownie Recipe

Melt in saucepan, then cool:
4 squares unsweetened chocolate (or 3/4 cup cocoa)
1 cup margarine or shortening

Add and beat until thick:
4 eggs, well beaten
2 cups sugar

Add:
1 teaspoon vanilla

Fold in just until blended:
1 cup flour
1/4 teaspoon salt
1-2 cups chopped nuts, optional

Pour into a greased 9×13 backing pan. Bake at 350 F for 25-30 minutes, or until shiny and firm on top. Do not overbake, middle should be fudge-like. Cool completely, then cut into squares. Makes about 24 brownies.

I have always gotten rave reviews when I bring my brownies places! Let me know if you try this recipe and how it was received! :-)
