Mexican Potato Bake
We had the most delicious meal tonight, courtesy of E-Mealz. I don’t normally put recipes here, but I had to share because it’s so easy and so tasty!!! I wish I had a picture but we ate it too fast. :-)
Mexican Potato Bake
Ingredients:
2 1/2 lbs potatoes, peeled and cubed
2 Tbsp olive oil
1 packet taco seasoning
15 oz. can black beans, rinsed and drained
1 cup shredded sharp cheddar cheese
1/4 cup chopped cilantro
1 cup fresh salsaDirections:
Toss potatoes with olive oil and taco seasoning and place in a 9×13 sprayed baking dish. (*Note: I forgot to spray my dish, and didn’t have any trouble.) Sprinkle beans over potatoes. Cover and bake for 45 minutes at 400 F. Sprinkle cilantro and cheese over the potatoes for the last 10 minutes of cooking. Top each serving with fresh salsa. Serves 6.
It was super easy to make – the longest part was chopping the potatoes into cubes. And it was super yummy! We shared our meal with another couple from church, and all four of us had seconds.

This is totally a dish you can get creative!! I didn’t think of chopped green onions. I think the sour cream was left out to make it healthier. :-)
Sounds just like something we would like here. I love simple easy meals like that – and it would be cheap and vegetarian too!

We loved it! I’m still not turned off to Tex-Mex right now (thank you, Lord!), so this was perfect. No meat, filling, delicious. We both liked it, which is big, as Steven believes meat truly is a necessary component for a meal. But right now, he’s on his own for getting his fill of meat because I’m not cooking it!
