Oh boy, do I have a treat for you!

Actually, the people who will appreciate the treat are mostly my fellow classmates from Taylor, but this will give others a glimpse at what life at my college was like.

I have really enjoyed having a Taylor friend, Bethany, live close by. She’s only been here for a few months and is moving to Connecticut after Thanksgiving. :-( That makes me super sad, but I know that God has a wonderful plan for her and her new husband! The other evening I was at Bethany’s apartment and she mentioned that she had the Airband tapes from 2001 and 2002.

Side note: Airband, for non-Taylor-people was a HUGE lip-syncing contest put on every year by our school. Usually a dorm wing or floor would get together and put on a performance, and in our case our entire dorm got together. Airband was always held at homecoming, so at the beginning of the year, and I thought it was such a neat way to unify the dorm and get the freshmen involved as we worked together for a common goal. 2001 and 2002 were significant years for Gerig Hall because those were the years we won! (Gerig won other years, too, but I wasn’t at Taylor then.) I had the privilege of being involved both years and even to this day my heart gets pumped just watching our performance.

So, Bethany lent me her Airband tapes and I put all the performances on YouTube so that everyone could enjoy! I hope you’re as super excited about this as I am!! (Disclaimer: The videos are poor quality, as is often with stage performance videos. The lighting in the videos washes people out so much you can hardly see them! And I was having trouble with a buzzing sound and the screen jumping in a few of them. I think it’s probably due to the natural degradation of VHS tapes.)

In 2001, my freshman year at Taylor, we did the song “Joyful Joyful”. I had so much fun doing it! I was one of the prop holders – the panel in the back in the middle. I tried SO SO hard to be one of the dancers, but I am SO not coordinated and I kept messing up. I think it was a mutual decision to be a backstage person. :-) Anyways, please enjoy our winning performance! (Oh and see if you can spot a VERY YOUNG LOOKING Beth!)

In 2002, my sophomore year, we did the song “The Devil Is Bad”. It was very different than the previous year, and still amazing. Okay – I KNOW I was part of the Gerig group – I know I was backstage and all, but I cannot for the life of me think of what I did. I assume something with props, but I’m studying the stage and cannot see where I would have been. I know I didn’t dance and I wasn’t in the band. So if anyone remembers, please refresh my memory! :-) Enjoy our second winning performance!

the best and worst financial things we've done

I’m not a financial expert, and I don’t want this to be a financial blog. There are a lot of really great blogs out there that cover that topic, so there isn’t a need for mine to be one of them. :-) However, I have been wanting to write this post for a while. Some things we’ve learned, coming from average Joes who don’t always do everything right but not always wrong either.

The Best Things We’ve Done
1. Lived on one income. We knew before our marriage that one day our goal was for me to stay home with our children, so we have worked hard to make sure that could happen. In fact, to force ourselves not to overspend we put the second income in a completely different bank where we didn’t have much access to it. We have used that bank account to pay on our loans and it’s been nice seeing those go down! We also use that as a savings account, which is nice when unexpected expenses occur. Being used to living on one income allowed us the latitude to pursue our dreams better, like when I decided to quit working. I firmly believe more families could afford to have one parent at home full-time if they had been wiser about their financial commitments earlier in their marriage.
2. Automatic weekly transfers. We didn’t start this early enough. Right now, we have a certain amount of money each week automatically transfered to our savings account. Since we don’t live on a strict budget (yeah, yeah, I know that’s bad, yadda yadda but let’s face it – we don’t – and we’ll move on from there), we often know if we can afford things by looking on our bank account balance. This has been a great way to force us to save because we don’t see the money in our checking account. I have been amazed at how easy it’s been to save this way. I know that ideally we should be using a budget and then we wouldn’t need to do that, but this way we don’t dip into our savings category.
3. We didn’t buy into the “buy now, pay later” cycle. I was brought up never to spend my money this way. In my memory, we always bought with cash, and if we couldn’t afford it then, then we waited. I remember the first time I came across the idea of “payments”. I was looking at a DSLR camera, and the salesperson was explaining to me that I could finance it and get the camera now and only pay a certain amount each month! That was a new concept for me, and I liked it but for some reason I walked away without the camera. Two years later, with our money saved up, we went back and bought a better camera. I am glad we don’t have any consumer debt. We did finance our car and we both financed our college, but I think both are different. I know people disagree with me, but I’m satisfied with our decisions and I would do them over again (though I hope to never need a car payment again!).
4. Paid cash for our wedding. This was a tough area for me. I actually tried on two different occasions to get loans to pay for our wedding, but my lack of credit history counted against me. It was SO hard to go to friends’ weddings and see all the things they “got” (seated reception! flowers! a dress that fit!) because their parents paid for their wedding. I know, how ungrateful of me! I still have a lot of regrets about my wedding and would love to do it over again. But, I am glad we paid cash for it. Even though it wasn’t what I wanted, I am not in debt and for that I’m grateful.
5. Talked to a budget coach. This is a free ministry of Crown Ministries (go here for more information about Money Map coaches). We only met with him twice, and we didn’t agree 100% with what he said, but he really helped us get the right focus and encourage us. If nothing else, he forced us to make a budget, which we lived by strictly for… two months. :-) But, when we ever get around to making a revised budget, it’s not so scary for us to either make one or live by it. Now to stop being lazy and actually do it…

The Worst Things We’ve Done
1. Lived at our means. One thing I regret is that early on, we weren’t faithful about saving extra money. We didn’t rack up debt, but at the same time we didn’t put much into savings either. We did save our second income for loans, but we definitely could have been saving more from our first income.
2. Got in the habit of eating out. I dislike cooking, and both of us are quick to just “grab something” at a fastfood restaurant. We like Subway, and getting salads at Wendy’s, so it’s not all burgers and fries… But we still do it way too much. Now that I’m in the habit it’s hard to go the other way and cook something for dinner. Mostly, I’m just lazy which is bad. We have wasted SO much money eating out all the time instead of cooking dinner.
3. Consolidated our student loans with a “graduated payment”. When I consolidated my loans, the idea of a graduated payment appealed to me. Basically, it divides your loan payments in 3 parts. For the first part (a few years, depending on the length of your loan), you pay only the interest. Then the next part you pay about double. Then the next part, the monthly payments go up to pay off the rest of the loan. The interest rate stays the same, but the minimum payments are changing. The idea is that as your salary goes up, you’ll be able to better afford the payments. My thought was that I’d do the minimum and then I would pay extra. Yeah, I never paid extra. Now I’m panicking because in a year or two my minimum payment is going to double. I wish I had just done the straight payment across the board (or been faithful about paying extra), so I wouldn’t have to worry now.
4. Didn’t think through our priorities. We have lived each day for itself, content that we weren’t getting ourselves in more debt, and buying things as we needed and wanted. However, we didn’t ever sit down to think through what we wanted in the future that would cost us money. I think if we had done that we would have we would have been more likely to put aside money for a house (which is an expensive!) instead of all the little stuff that quickly adds up! It’s just good to know where you want to go, in general, and decide for yourself where your priorities and timetable with that are.
5. Bought into the materialistic lifestyle. This one is easy to do, and hard to break the habit. Shortly after we were married, we moved into a huge two-bedroom townhouse. I’m not saying I regret that, but now I’m wondering if it would have been better to stay in a small apartment in order to keep our lives simpler. Living in this small space now definitely keeps me in check about buying “stuff”! I look at my life and all my junk and the things I think are “necessary” to buy and I get disgusted about myself. What a change from my life growing up! I’d love to return to my attitude prior to age 18, but I know it’s really hard to go backwards. It’s a goal though and I’m working on it!

new look for fall!

It’s been a really long time since I’ve changed the look of my blog! I liked the other theme, but it was time for a change. I thought I’d get in a seasonal mood, and in a few weeks when it’s Christmas season I can change it again.

I’ve also been thinking of redoing my categories to make them more useful, and perhaps using the tagging feature that is now present in WordPress. I used it briefly a year ago, which is why in my tag cloud on my sidebar most of them say “Christmas”. :-)

I’m looking over this new calendar and I can’t help but be amazed at how it’s almost the middle of November and I have hardly written in here at all! I can’t really explain why – got out of the habit I guess. I have certainly written a lot of blog posts in my head. Here are a few that you might see in the future:

  • Things we did right and things we did wrong about our finances
  • Thoughts about losing weight and my own personal journey
  • A few Simon & Garfunkel songs that have made me think
  • The confusingness of cell phones and landlines, and decisions we have to make in regards to these
  • Anecdotes from my past – I have really wanted to do this, more of a way to record it for myself and also as a way to share about my life growing up on the mission field… I write a lot of these posts in my head but usually am too lazy to actually type them up
  • Many picture posts about some recent trips we’ve taken

I have now been a full-time stay at home wife for a month now! I can’t believe it’s been that long. After an initial feeling of worthlessness, I’ve settled right in. We were pretty busy at first – me being sick, company coming, then going to Savannah for a week. Now I’m trying to find a routine that keeps me busy and helps me get the work done. I’ve been struggling with feeling lazy. I KNOW the dishes need to be done, but I don’t feel like doing them and I put them off in favor of checking my email for the bazillionth time.

One thing I have added to my schedule that I’ve wanted to do for a long time now is volunteer at a local cat shelter. I’m really excited about this! I start on Friday and will be spending 3 or 4 hours there once a week feeding the kitties and cleaning the litter boxes. It’s a no-kill cage-free shelter with about 100 cats. I was a little overwhelmed when I went there so hopefully I get acclimated fast. :-) I do love kitties, and I am excited to be giving my time to help them. I am considering adding one more volunteer opportunity to my week after the new year. I have a few ideas in mind of things I’d like to do, so we’ll see where the needs are in January.

Another thing I’ve been doing is making greeting cards! Recently a friend showed me how to stamp, and I have been really excited about this newfound hobby! I keep telling Paul that this is basically graphic design except instead of the computer I am using colored paper and ink! I am working on building my stamp collection, which is coming along slowly but surely – they can be quite expensive if you’re not careful! :-/ I made a website to keep track of my designs and as a chance for me to critique them. I’ll also be displaying other craft-related projects there as I finish them.

Okay I am going to stop now and work on some other posts for the next few days/weeks. :-)


Lomo Saltado

I decided to follow in Beth’s vein of thought and post my own recipe. This isn’t quick and easy per se, but it is a traditional Peruvian dish called “Lomo Saltado”. I’ve only made it myself once, with the help of cooking expert Susan, but it turned out really well. Without further ado, may I present:

Lomo Saltado (Peruvian Style Stir-Fried Beef)
1 1/4 lb lomo (tenderloin) (the flavor depends on this, but any other tender meat can be used – I use stew beef in the States), cut into strips
2 Tbsp vinegar (white, OR use red wine)
2 tsp soy sauce (optional)
1 Tbsp Worcestershire sauce (optional)
2 large onions, cut in slivers, lengthwise
1 aji amarillo (or yellow pepper) – without seeds or membrane, in slivers
1 clove crushed garlic
2 tsp cumin
1 Tbsp oregano
salt and pepper
1 1/4 lb white or yellow potatoes, cut for french fries and soaked in ice water
flour
2 tomatoes, cut in lengthwise slices
chopped parsley for garnish

Heat the frying pan and sear the meat until all the juice is out but the beef is not completely cooked. Add 1 tablespoon of the vinegar, scraping the pan juices. Add soy sauce and Worcestershire sauce. Set aside or place in dish to keep warm. In another pan, fry the onions, aji, garlic, cumin, oregano, salt, and pepper. When golden, add one tablespoon of vinegar and set aside. Drain the potatoes and dry thoroughly, one by one. Shake in a bag with a little flour. Fry the potatoes. Stir the meat with the onions, add the tomatoes and heat for two minutes. Serve with meat on top of French Fries, or mixed, as you prefer. Sprinkle fresh chopped parsely on top. Serve with white rice. Serves 5-6.

Typical Peruvian meal – has both potatoes AND rice. Hehe. :-) It’s one of my favorite Peruvian dishes. To make it easier, I would recommend using store-bought frozen french fries instead of making your own from potatoes. Enjoy!
