pita pizza, my new favorite dinner

I have a new favorite dinner. I call it Pita Pizzas and they’re super easy to make. And they’re healthy!

Ingredients:
- Whole wheat pita bread (1 per person)
- Pizza or spaghetti sauce
- 2 oz. mozzarella cheese, shredded (per person)
- 1 oz. turkey sausage (per person)

First you take the pita bread and put pizza sauce on top. I bought the kind in a jar, but you can probably make your own sauce from scratch.

Sprinkle shredded mozzarella cheese on top.

Cook the turkey sausage (we found that one 1 oz. link was enough for one pizza), dice it up, and sprinkle it on top. Paul likes putting this step before the cheese, and I prefer it after. (You could also experiment with other toppings like pepperoni, but I thought it was perfect just how we made it.)

We used our toaster oven and cooked each Pita Pizza at 400 F for about 10 minutes, or until cheese is golden brown and bubbly. Let cool and enjoy! :-)


that was nasty

So I’ve been getting some bad heartburn recently. I’ve struggled with heartburn off and on for the past year or so – it seems like it gets really bad for a few days, and then eases up for a while, and so on. My mom has struggled with acid reflux so I am a little worried that I’m going to have as much trouble as she has had!! I hope not.

Anyways, I usually take Tums for the heartburn. Yesterday, however, it was bad. I took the Tums and it didn’t help at all. A few hours later I took more Tums and it still didn’t help. I found laying down helped, but that’s hard to do all the time! :-)

Since I didn’t have any other medicine, I decided to see what other home remedy could help heartburn. I had some rice, which my mom said always helped her, but nothing. Then I read somewhere that vinegar was supposed to help. I also remembered that I’d had people in the past swear by vinegar as a natural remedy for heartburn.

I found something that said I should drink 2 tablespoons of apple cider vinegar after eating dinner. So, put two tablespoons in a cup and stood there for a VERY long time, feeling the burning in my esophagus fighting with my nose that was smelling the vinegar. Finally, I plugged my nose and chugged down the vinegar.

Blech.

It tastes better than it smells, though, if that’s any consolation.

And you know what? I haven’t had heartburn since. A few times it’s flared up, but then gone away almost immediately. Perhaps it would have gone away anyways, but I must say I would do the apple cider vinegar thing again. (Hey it can’t hurt, right?) I also bought some apple juice to mix with for next time. :-)

I have been excitedly following the news of Susan‘s labor and subsequent delivery since I first got an email from her parents yesterday. Little Hans Keister entered the world this morning at 2:57 am. Check out Susan’s blog for more details and to congratulate the mother!


and she's back again

Oops I didn’t mean to disappear again. :-) A lot has been happening! I decided to do the boring list format to catch y’all up, so bear with me!

* We joined our church. We had to take a few preparation classes and then meet with the elders, where we talked a little and shared our testimonies. We are excited about this step, though we’re a bit sad that ties with our old church are officially cut! Our new church is really big on people being involved, and not simply showing up to Sunday morning service. They encouraged both of us to get involved in discipleship, which is a small group of same-gender people where you study God’s word and provide some sort of accountability for each other. Most of these groups meet during the schoolyear only, so we’ll probably get more involved in that in September. Paul has already hooked up with a group that he’ll probably join in September, and I’m very excited for him!

* I have joined our church’s choir. As you know, I sang in our last church’s choir and loved it. I am not the best singer, and certainly not a soloist, but I enjoy music and the fellowship. I went to my first meeting last Thursday, and look forward to practices every week and worship weekends once a month or so. It’s going to be quite challenging as I will have to sing at all three services on worship weekends! Random fact: One of the girls in the choir I knew from my middle school youth group when we were on furlough in another part of Atlanta in 1996. I doubt she remembers me, but I’ll still introduce myself to her next week. It’s a small world!

* I bought myself a Blackberry Curve with the money I’ve earned from my other blog. It’s pretty snazzy! I’m still trying to figure it all out; I think it’s complicated. :-) Let me say, though, that getting Google maps on there is the coolest thing evah. I can triangulate my position with the cell towers if I’m lost… Yes!

* We haven’t decided what to do about our internet yet. We are torn; it’s a tough decision.

* Here is a picture of me and some of my coworkers. We’re a fun bunch.

* I have lost 5.2 lbs. Yay for me!

* We went camping last weekend at General Coffee State Park. We met Sopeak and Zay there, who had been in Florida visiting Joanna. We had a WONDERFUL time despite the bugs. ;-) I hope to post more about that later. I need to get my pictures off my camera first…

* Sopeak and Zay came and stayed with us for a few nights after we camped. Sopeak had never been to Atlanta, so they spent Monday seeing the sights. I loved having them here, and they were very lucky that our apartment was clean! ;-) I should be on the ball and keep the apartment clean more often in case we have other unexpected yet thoroughly enjoyed visitors.

* While Paul and Sopeak & Zay went downtown yesterday, I had to go to work. It was soo hard to drag myself out of bed that morning. I got to work and I think the tiredness of the weekend combined with a bad cold that I developed took its toll. I got a horrible migraine, had to come home and lay moaning in bed until about 7pm when (after losing my lunch) I felt better enough to walk around. I hated that I had to miss a day of work after only having 28 hours last week, and I hated that I couldn’t even be with our friends! But I’m okay now and looking forward to a nice long sleep tonight. The cold seems to be about gone, which is yay!

* I want to watch some Gilmore Girls now. Good bye. :-)

I’m back!

Betcha didn’t know I was gone, huh?

I’ve actually been without internet for the past few days. Originally it was going to take a week to fix, but Paul and I saw one of the service technicians around our complex today and we sweet-talked him into fixing our internet. It took him less than 2 minutes. Don’t even get me started on the ineptitude of our cable company. I’d say to all of you don’t choose DirecPath, but in actuality anyone who has to go with them probably doesn’t get a choice since they service apartment complexes.

So we are in the process of trying to find a new ISP. Any other cable company is out of the question because DirecPath has a contract with our complex which keeps out any other cable company. Dial-up is also out of the question, which only leaves DSL. I’ve had good experience with BellSouth/AT&T internet in the past, so I guess that’s the way we’ll have to go. Their customer service is terrible, but at least I never had to call them – in two years I never once had the internet go out.

The thing that is making me hesitate is that I really, really enjoy having the cable tv. We can’t get TV otherwise, and we prefer to watch TV shows not on the computer. (We like cuddling on our comfy couches and watching our new TV.) I’m trying to decide what I want more: reliable, consistent internet or cable tv?

Are there any other internet options that I’m missing?
