dinner adventures

I’ve been trying to be better about watching my food budget, so last week when I saw that chicken was on sale, I jumped at it and bought several pounds without actually thinking of meals to go along with it. I pulled one pound out during my lunch break the other day to defrost. By the evening, however, neither of us knew what to make with it. All the meals we usually eat with chicken that sounded good to us required marinating, and we were hungry!

So I got creative. Now let me say that I am the type of person who ALWAYS follows a recipe EXACTLY – even so far as measuring out 1/4 teaspoons of salt and making sure the top of the measuring cup is level. If I don’t have a recipe, then I probably don’t make the meal. There is no such thing as “winging it” in my book. :-)

I hope you have a better appreciation for when I say I got creative. This literally is the first time I’ve done something like this. First I got a package of tortellini that I had bought for another recipe and never used. Tired of seeing it sit there, I decided to make it for dinner. I also cooked the chicken on the George Foreman (probably my favorite small appliance in the kitchen) as normal, letting it brown nicely with oregano and pepper. Then I cut up the chicken in small pieces and mixed the two together. What is missing? Ah a sauce! I didn’t have any sauce mixes on hand, but that doesn’t matter. Turning to page 208 in my trusty Wycliffe cookbook, I followed this easy recipe (okay so I can’t get TOO creative):

Combine in saucepan:

2 tablespoons butter, melted
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon pepper

Cook over low heat, stirring until mixture is smooth and bubbly. Boil 1 minute. remove from heat. Stir in slowly:

1 cup milk

Bring to boil, stirring constantly. Boil 1 minute.

I actually doubled this recipe, but it made a nice smooth, thick white sauce. Also last week I had asked Paul to get some string cheese when he was at the grocery store but he accidentally bought a generic brand and I’m picky. It’s not very stringy or good to eat alone, so I shredded 6 sticks and added them to my nice sauce! It was a bit cheesy but I loved it. A little paprika and pepper to taste, and an excellent meal was enjoyed by all involved. (This is also significant because I rarely do the cooking.)

For dessert, I was craving a yogurt parfait like the one I’d had at La Madeleine. We didn’t have any fresh berries, so we used frozen, and I added a dollop of plain yogurt and granola. We both enjoyed dessert very much (although we decided fresh berries would be better).

Hopefully one of these days I’ll be able to manage mealtimes a bit better, so my kids’ version of a homecooked meal doesn’t come out of a frozen dinner box. :-)

One last picture, and Ikea billboard at one of the train stops in Atlanta. I like the tables comment. (Since I work in advertising, I notice advertising and think it’s interesting. And baby tables are just cute.)

10. Who was your first best friend and are you still friends with them? Jill Carney, and we don’t keep in touch anymore

11. Where was your first sleepover? I am not really sure, but I think perhaps Sarah Ruppert’s house in 7th grade

12. Who is the first person you talk to in the morning? someone at work… I’m usually pretty quiet until midday unless someone talks to me

13. Whose wedding were you in the first time? maid of honor at Beth’s wedding three years ago tomorrow!

14. What is the first thing you did this morning? look confusedly at the clock when my alarm went off at 5:30 (alarm for Paul to get up, but I can never tell when I’m sleepy)

16. First tattoo or piercing? I pierced my ears for the first time at age 6

special Christmas memories

My birthday is one week from today! I am very excited, because this is my first birthday spent with my hubby. Even though I’ve known him for over 5 years, we’ve always (understandably) been apart for Christmas. I’m not sure what we’re doing yet for my birthday, but I hope it’s a fun day. One of the perks of being a Christmas baby is that I’ve never had to go to school or work on my birthday, so I’ve always been able to choose the daily activities.

Christmas is my favorite time of year! I love the lights, the decorations, the movies, sending Christmas cards, connecting with old friends and relatives, and most of all, the music. I love the Christmas Eve candlelight service, coming up with gifts for everyone, and pretty wrapping paper. I love nativity sets, caroling around the neighborhoods, and church cantatas. And of course I love that my birthday is during this time of year. If I was born in a different season, I would have wanted to have a Christmas wedding like Beth (happy anniversary tomorrow!), but it didn’t work out that way.

This year has been fun because it is my first Christmas with my husband. I have been able to, for the first time, share my Christmas memories with him. Here are a few of the decorations around our apartment:

I got a Precious Moments “Our First Christmas Together 2006″ ornamentI used to make “Kitty’s First Christmas” ornaments for my cat when I was growing up. The one on the top left is from 1993, with each subsequent year until 1995. The bottom one is crosstitched. I like how they become progressively more complex as I got older.

As I said, I was born the day after Christmas in 1982. This stocking is what the stork brought me in. :-) Actually, it was made by hospital volunteers. The tag reads:
“This Red Christmas Stocking
Symbolic of the time of year
was made by the KHV’s [volunteers]
to hold your baby dear.We’ve enjoyed having you with us
for the past few happy days
and we wish you a Merry Christmas
and many joys along life’s ways.

This ornament makes me smile because the inscription says: “Baby’s First Christmas 1982″. However, I wasn’t born until the day AFTER Christmas in 1982, so my first would have been in 1983. It makes me laugh to have a “First Christmas” ornament with the wrong year on it :-)

I’m looking for an easy-to-use, free FTP client for PC. It’s for someone who doesn’t know very much about computers, so it needs to be straightforward. All they are doing is posting files to a web server. Anyone have suggestions?


it's beginning to look a lot like Christmas…

Actually the weather is gorgeous here – low 70s, beautiful and sunny. Today Paul and I drove around after church with the sunroof open and the windows down.. . I feel like I’m in Florida! :-) We have had a delightful weekend, busily finishing up Christmas shopping (we hope to get everything mailed tomorrow to the relatives in Massachusetts and California). Last Wednesday night we went caroling with our church, which was a lot of fun! I haven’t been caroling since my junior year at Taylor, and this time it was much warmer! ;-) Everyone in the neighborhood seemed to enjoy the caroling too. Paul and I decided next year we want to dress up in Old English costumes and go caroling. What do you say? Anyone with me? We’re willing to drive as far away as, say, Buford. ;-)

This coming week will be a blur of Christmas parties and packing before we leave to Orlando on Friday. We’ve decided to avoid the Saturday traffic and leave after work Friday night. Traveling at night is better, anyways, for us since it isn’t as hot and it’s easier to leave the kitties in the car as we go eat dinner and such.

This morning in church we sang a beautiful arrangement of “Mary Did You Know?”, which I loved. Today is our last Sunday at our church until after Christmas, which is weird because Christmas seems so far away! It’s hard to believe that my birthday is only 9 days away!

Work has been extremely busy this past week. We kinda got slammed with more jobs than we expected (usually we’re rather slow at this time of year) so we were scrambling to get them all done. On top of that, I also had a website to finish. Oh! I don’t think I mentioned it, but I won an award for a website I did at work. I got the “gold” award which is like 2nd place. Our company did really well – I think we won an award for 6 of the 9 entries we submitted. Anyway, we were all excited and I’m happy for something cool to add to my resume. :-) The client I did the website for was tickled and sent me a bouquet of cookies in congratulations.

Today is a nice, lazy Sunday. We are enjoying it. :-) I think we’ll try to decorate a gingerbread house this afternoon, as well as get the Christmas presents all packaged up. Only 8 more days until Christmas!
